Cave de Ribeauvillé already possesses its own rosé : the Allegro typically made with the infamous Pinot Noir varietal. This summer, la cave introduces its newest invention, the “GreyRoz”, elaborated with the Pinot Gris varietal. The fundamental ideas were to present a new wine, fun, and trendy at the same time.
“Rosé today is very trendy. Twenty years ago rosé was a “mistake” derived from the Pinot Noir, nowadays it is not the case anymore. During the year and especially during summertime, it is extremely on demand. It is important to be adapted to our time and be reactive. The idea of leaving the exclusiveness to the other regions was out of the question, we had to react”, explains Yves Baltenweck, president of Ribeauvillé’s wine cooperative.

This particular wine is the fruit of the maceration of the Pinot Gris grains combined with the cooperative’s oenologist Evelyne Dondelinger’s very close and intensive caretaking. “It’s Yves idea of giving the varietal a new image and upgrading it.” With its pink salmon robe, the cooperative’s new-born idea has all it needs to seduce today’s wine amateurs. “This gourmet product was entirely developed with healthy grapes. Its features include a fastidious length, a nice balance and a pleasant freshness.” Its alcohol content is of 13º and is can be nicely combined with a barbecue and fish and is very refreshing as an aperitif. “Our aim interacts between young customers, the curious and of course, rosé amateurs.”
