Selection of plots around Ribeauvillé and Bergheim which are harvested in
over-ripening with the development of noble rot. Selection obtained by successive sorting of grapes affected by noble rot, from plots harvested at over-ripeness several weeks after the end of the official harvest.
The grapes are harvested exclusively by hand. Whole bunches are pressed in pneumatic presses to avoid crushing. The juices are separated to optimise the quality of our wines. After static settling, the wines are fermented under temperature control and then matured on fine lees for 7 months. After filtration, the wines are bottled and matured in our cellars.
Golden yellow in colour, this Riesling SGN has a complex, concentrated nose of candied citrus fruits (lemon, yuzu, kumquat) delicately underlined by the mineral notes that are beginning to emerge. The palate is also very concentrated. The wine is extremely pure, even crystalline, with very precise aromas and a final acidity that lightens the whole by removing any heaviness and lengthening the wine over and over again. This is a wine of astonishing persistence and magnificent balance.
What to marry it with?
Osez-le sur un Foie Gras poêlé. It will also charm you with a fruit mousse, a lemon meringue pie or a strawberry tart with a rhubarb coulis. Or, at the end of the evening, to re-discover the world until the end of the night.
